This year for my birthday I had grand dreams of a gluten free pizza party complete with martinis, pajamas and a movie. I am happy to say said dreams came true! For this party I put brown kraft paper on my dining room table and by using bowls full of toppings converted my table into the pizza buffet dreams are made of. We had tons of veggies, meats and cheeses. We had goat cheese, pecorino and buffalo mozzarella, making the entire buffet cow dairy free. Toppings included olives, artichokes, purple asparagus, arugula as well as roasted chicken, bacon and prosciutto. We had Colorado’s own Cappello’s Naked Gluten Free Pizza Crusts. Each of us had our own pizza to deck out however we wanted. I made a rainbow of toppings from bacon, artichoke and olive to pepperoni, pineapple and roasted tomatoes. For the DIY dirty martini bar, we had gin and vodka as well as olive juice in droppers and goat cheese stuffed olives. And what is a birthday party without cupcakes? Thanks to Kim and Jake’s Bakery in Boulder, I had three flavors of gluten free cupcakes: spiced carrot, coconut and chocolate chocolate. To top it all off, we cozied up around the couch and watched my favorite dance movie, “Step Up 2.” It was such a special ladies night in. I can’t recommend trying your own version enough. The next day I took my topping leftovers and made fajitas.
I am so grateful to kick off my 36th year with this amazing group of women, good food, cocktails and laughter. Life doesn’t get much better.
