It’s actually kind of hard to believe that I have had the blog for four years and haven’t written a post about watermelon salad before. I once grew a 25 pound watermelon in my garden and threw it a party… True story. Apparently you can make watermelon margaritas and watermelon salad for 10 girlfriends and still have leftover watermelon with one 25-pound watermelon. It’s actually pretty fascinating to grow watermelon because its leaves uncurl in the most beautiful geometry and then sprout little flowers that somehow turn into a gigantic, succulent watermelon. Watermelon is the ultimate abundant fruit of summer. Watermelon is so fly Beyoncé wrote a song about it.

According to the Medical Medium, melons are extremely healing. “Melons are one of the most alkalizing foods. The fruit’s high bioavailable and bioactive trace mineral count is responsible for driving electrolytes higher than normal, making them easily usable by the body. In return the body’s detoxification processes become amplified, driving out traces of DDT, other pesticides, herbicides and heavy metals from deep within the organs.

So make this salad. It might heal you and make you feel more like Beyoncé. For an easy summer dinner I’ll serve it with grilled BBQ chicken and corn on the cob.

Watermelon Salad

Ingredients

  • 4 cups Cubed watermelon
  • 4 ounces Sheep or goat feta
  • 2 Limes
  • 1/2 cup Fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. In a medium bowl place the cubed watermelon. I prefer 1 inch sized squares. Zest the limes on top of the watermelon and then squeeze the limes on the watermelon. Crumbled the feta with your hands into the bowl. Tear the basil and mix in the bowl. Add salt and pepper to taste.
