Let’s kick off this warm summer weekend with my new favorite patio pounder, the Red Pepper Tequila Spritz. I am obsessed with the subtle red color of this cocktail due to the homemade red bell pepper simple syrup. This recipe is bubbling with garden freshness and a subtle hint of tequila. The reposado tequila is important to the recipe to give it a fuller flavor. You can make these individually or for a girls’ night in make a pitcher.
Serve with guacamole and chips for an easy summer happy hour.
Red Pepper Tequila Spritz
- 2 oz Reposado tequila
- 1/2 oz Red Bell Pepper Syrup (recipe below)
- 1/2 oz lime juice
- sparkling water and ice
For Red Bell Pepper Syrup
- 1 red bell pepper
- 3/4 cup organic sugar
- 1/2 cup water
To make the syrup, chop the bell pepper into small cubes saving a few strips for garnishing. Then place cubed pepper, water and sugar in a blender. Blend on high for about a minute until smooth. Keep extra syrup in a sealed glass container for up to two weeks.
To make this cocktail, start with an old fashioned glass stacked full of ice. Add in the tequila, bell pepper syrup and lime juice, and stir. Top with sparkling water. Stir again and garnish with a strip of bell pepper or lime wedge.
