I love the color and flavors in this spring salad. The roasted beets are sweet, yet earthy and go great with the blue cheese and dijon dressing. This is a great salad for outdoor entertaining. Serve with your favorite fish or meat off the grill. I love this salad with grilled salmon. To keep it vegetarian, serve alongside your favorite veggie burger.

Roasted Golden Beet & Blood Orange Salad
- 2 golden beets
- 2 blood oranges
- 2 ounces sheep’s milk blue cheese
- 4 tablespoons olive oil
- juice of half a lemon
- 1 teaspoon dijion mustard
- 1 tablespoon balsamic vinegar
- 1 head of red leaf lettuce
- salt and pepper to taste
Preheat over to 400 degrees. Wash beets , cut off stems, but leave skins on. Chop into cubes. Mix in a baking dish with 1 tablespoon of olive oil and salt. Roast beets for 45 mins.
Meanwhile, mix the dressing with remaining olive oil, mustard and vinegar. Season with salt and pepper. Stir with a whisk.
Chop greens and place in a large salad bowl. Top with sliced blood oranges and blue cheese. Finish with roasted beets. Drizzle with dressing and serve.
