The holidays are upon us and there is so much to be done, and yet so much to be celebrated. For an easy festive meal, I recommend this grilled cheese. It only takes about 20 minutes to make and saves your time for hanging by the fire and relaxing, wrapping presents, or crushing out the last of your year’s to do list. And did we mention, it is divine?

Don’t eat bacon? Try it with sliced pear and arugula instead.

The Palette. Gluten free bread, fig jam, bacon and goat gouda cheese.

Gluten Free Bacon, Fig & Goat Gouda Grilled Cheese

Makes 1 sandwich.

  • 2 pieces gluten free bread (I use Canyon Bakehouse 7 grain)
  • 3 pieces of cooked bacon
  • 2 ounces of goat gouda
  • 1 tablespoon fig jam
  • 1 teaspoon grass fed butter

Start by cooking your bacon. Then set bacon aside. In a grilled pan or frying pan, melt over medium heat one teaspoon of butter. Assemble sandwich by spreading fig jam on one side of one piece of bread and placing bacon on top of the fig jam. Shred the cheese and place on the other piece of bread. The shredded cheese helps the cheese melt more evenly. Put the sandwich together and place one side down on your pan. Cover the pan and cook for 5 minutes. Flip, and cook covered for another 5 minutes. The bread should be toasted and the cheese melted. Slice and serve.
