In keeping with the Meatless March theme on the blog this month, I bring you some delicious tacos that are easy for any meat lover to enjoy. I am not vegetarian, but I am making an effort to cook more meat free meals at home right now as part of an effort to detox my body for spring. Giving the body a detox from meat-focused meals at dinner gives the digestion system a break, which allows it more time to help detox your body. I don’t like to do cleanses. (I’ve done them all at some point or another.) Instead I like to look for healthy ways to detox your body that is more sustainable with your long term lifestyle. Adding some meat free meals during your week is an easy way to do that.

Omit the cheese and this meal is vegan.

Black Bean & Sweet Potato Tacos

Serves 3-4.

For black beans

  • 1 can black beans, drained.
  • 1/2 a yellow onion
  • 4 cloves minced garlic
  • 1 yellow bell pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • juice of half a lime
  • salt and pepper to taste

For roasted sweet potatoes

  • 1 medium sweet potato, cubed. (skin on)
  • 1 tablespoon olive oil
  • 1 tablespoon cumin
  • 1 teaspoon chili powder

For serving (optional)

  • almond flour tortillas
  • sungold tomatoes
  • shredded goat gouda
  • lime
  • cilantro
  • sour cream
  • avocado

Preheat over to 400 degrees. Put sweet potatoes in a baking dish with olive oil cumin and chili. Bake for 30 minutes. While the sweet potatoes are baking, prepare the beans with a large frying pan. Over medium heat, add 1 tablespoon coconut oil with onion and bell pepper. Cover. Stir occasionally for 10 minutes. Add in garlic and stir for one minute. Then add in black beans, cumin, and chili powder. Cook over medium heat for 5 minutes. To serve, heat up tortillas and add sweet potatoes and black beans. Garnish to your liking.
