This is a wonderful vegan option for sour cream. I love it with almost anything southwestern inspired from taco bowls to quinoa salads. Cashews are packed with vitamins, minerals and antioxidants. So go ahead and use this vegan sour cream on your favorite dishes or as a dip with crudities.
Cilantro Cashew Vegan Sour Cream
- 1 cup raw cashews
- 2 tablespoons water
- 1 teaspoon lime juice
- handful of cilantro
Soak the cashews in water for 30 minutes to overnight. Drain and rinse the cashews. Place cashews in a blender with water, lime juice and cilantro. Blend until smooth and creamy. You can add more water as desired.
