In honor of Cinco de Mayo I am serving up my Skinny Cucumber Margaritas. These margaritas are sugar free and liqueur free, but ever so tasty. It basically is green juice with tequila, so I am calling that a win win. Cucumbers are full of nutrients, so these margaritas are good for you. That’s my story, and I am sticking to it. I grow cucumbers in my garden. My garden cucumbers harvest in August-October, so these margs are also part of a new series I am starting this summer called Grow Your Own Cocktails.
This tequila is my hands down favorite blanco. I am more of a reposado girl, as I mentioned in my Blood Orange Margarita recipe, but this blanco has stolen my heart. Tequila Ocho makes delicious tequila across the board. I love the anjeo as a shot.
So back to how this margarita is so good for you. Cucumbers are high in antioxidants, vitamin C and anti-inflammatory properties. Also, important to note, juice your cucumbers with the SKINS ON. Cucumber skins are full of nutritious benefits. They are rich in fiber and contain beneficial minerals like potassium and magnesium.

Skinny Cucumber Margaritas
Makes 4 margaritas.
- 3 cucumbers
- 6 limes
- 10 ounces of blanco tequila
- coarse sea salt
- chili powder
Start by cutting 4 cucumber circles for garnish. Using a vegetable juicer, juice cucumbers with the skins on. Then juice limes by hand or with hand held juicer. Put these items in a pitcher and add the tequila. Mix a few tablespoons of sea salt and chili powder 50/50 in a bowl. Take one of your limes that you juiced and run the center of it over the rim of your glasses. Then turn the glasses upside down in bowl one at a time and rotate to get the chili salt all over the rim. Fill each glass with ice. Garnish with cucumber. Make sure to stir the margarita pitcher right before serving up these delicious margaritas. Cheers.
