It’s full on summertime here in Denver. It seems like summer took forever to get here, as we were blessed with so much needed rain.. and then some. But it is mid July, the sun is shining bright in the 90’s, and every week seems to center around some sort of pool party or grill out with friends. This healthy twist on a frozen classic is sure to keep you cooler on these hot summer days, and is oh so tasty.
For this recipe I use real coconut milk instead of the coconut “creams” that alot of people use that have added sugars and sometimes actual cow milk and even corn syrups. This coconut milk is just pure coconut water and meat, and can be found on your natural grocery aisle. Paired with a dark rum for more flavor and some pineapple juice, and this pina colada is practically a smoothie with rum in it.

- 1 1/2 cups ice
- 1/2 cup pineapple
- 1/2 cup coconut milk, unsweetened. (from a can)
- 4 oz. dark rum
Mix all ingredients into blender. Blend until smooth. You can add more ice for desired consistency.
Serve with friends and enjoy.
