I am a huge fan of ginger. Which is also what I blame my chai almond milk latte addiction on. The ginger is just so soothing and spicy. I can’t get enough. As of this week I am embarking on an 8 week wellness challenge. Part of this challenge for me is to cut all processed or cane sugar.  I am not big on sugar anyways, but I am really into my chai lattes and the almond milk my coffee shop uses is sweetened. So in an effort to move away from my morning chai addiction, at least for now, I am replacing my morning ginger fix with this lovely smoothie.

The ginger has a nice kick and is perfect for soothing the belly. Perfect for the morning after an indulgent summer night of drinks with friends.  The spinach starts the day off with a cup of greens, and the blueberries add major antioxidant goodness. The almond butter, spinach and chia seeds all contain protein. Cinnamon, of course is a super food all of its own, and adds stimulating energy and circulation to the body. This is the perfect morning smoothie or post workout smoothie. I hope you like it as much as I do.

Chia seeds are full of omega 3’s and antioxidants. They are also high in fiber and protein.

Blueberry Spinach Ginger Smoothie

makes 1 smoothie

  • 1 banana
  • 3/4 cup unsweetened almond milk
  • 1/2 cup frozen blueberries
  • 1 cup fresh spinach
  • 1 teaspoon cinnamon
  • 1 tablespoon chia seeds
  • 2 tablespoons of unsweetened almond butter
  • 1 inch square piece of ginger, skin peeled and chopped.

Place all ingredients in a blender, starting with almond milk first. Blend for about a minute until ginger and blueberries are all well mixed. Sip and enjoy.
