Warm summer days are upon us, which means it’s time to step up your smoothie game! My current obsession with collagen peptides continues with the new vanilla coconut water flavor that Vital Proteins has just released. I created this smoothie to play off the coconut and vanilla flavors with avocado, mango and mint. The mint adds a garden freshness to this tropical-inspired smoothie. 

I can’t wait for my garden to go mint crazy so I can have this smoothie every day. The collagen powder is perfect for a breakfast fix or some post workout fuel. I love to have this smoothie after my morning workout and it keeps me fueled up until lunch.

Avocado Mango Mint Smoothie

Makes 1 smoothie.

  • 1 banana
  • 1 cup fresh spinach
  • 1 cup unsweetened Pacific coconut milk
  • 2 scoops of Vital Proteins vanilla coconut water collagen protein
  • half an avocado
  • 1/2 cup of frozen mango or half of a fresh mango
  • handful of mint leaves

Blend all ingredients into your blender for about a minute. Then garnish with mint.
