Nothing quite says the holidays like food and drinks with family and friends.  Whether it is a big elaborate dinner or a casual get together, this pomegranate guacamole deserves a seat at the table.  I first started making this guacamole for Christmas day tacos many years back.  If it was just a small gathering we would skip the traditions and whip up lobster tacos with pomegranate guacamole.  (highly recommended)  Since I eliminated corn from my diet 3 years ago, sadly this anti-tradition hasn’t continued, but the guacamole sure has.

I serve this festive guacamole two ways. For an appetizer, I serve the guacamole with Beanitos “restaurant style” bean tortilla chips that are corn free. Because they are made of brown rice and beans they also had the added bonus of packing a little protein.

I also started serving this guacamole on top of a baked sweet potato as a side. It is a gorgeous presentation and will wow your guests as a healthy holiday dinner when served alongside your favorite salmon dish.

Whatever way you choose to serve it, this pomegranate guacamole is delicious.  I hope it becomes part of your winter celebrations for years to come as has it for me and my family.

Pomegranate Guacamole

Serves 4-6.

  • 4 avocados
  • juice of 1 lime
  • 1/4 cup chopped red onion
  • 1/2 cup pomegranate seeds
  • handful of cilantro
  • salt to taste

Mix avocados in a bowl with lime juice. Season with salt. Add red onion, pomegranate seeds and cilantro. Mix well. Make sure salt and lime is to your liking. You can always add more. Serve with tortilla chips as an appetizer or on top of a baked sweet potato for a side.
