Chicken salad is always something I have had a love affair with growing up in the South. Chicken salad on a salad of mixed greens is one of my favorite salads of all time. I will be doing a twist on that salad later this summer. For this recipe, I feature a way to turn chicken salad into an appetizer as well as make it picnic friendly.
It’s the week before the Fourth of July, which means summer festivities are abound. I am currently at the beach in the Outer Banks of North Carolina, but plan on returning before the weekend of the Fourth. We usually throw a huge grill out bash for the Fourth but this year we are trading that in for a chill day on the lake with friends and a little camping.
I am an iced tea addict. Having a pitcher of iced tea permanently in the fridge is a summer must of mine. I usually keep a pitcher at home as well as in my art studio mini fridge.
Among the Colors recently celebrated our 1st birthday. Yay! It’s been a wild and trying year and having the blog has been such a blessing. It’s been a learning curve as with any new adventure, and I am so grateful to have a platform to share my creative endeavors with you all. It is so wonderful to have a creative outlet that isn’t tied to my art studio and that I can continue as I travel and move around.
